The cheeses we stock are ones Nicola has known for years: local Abruzzese producers, properly aged, with flavors that can hold their own against cheeses from the rest of Italy. Pecorino, caciotta, scamorza: we select them because we've been serving them in our shop for decades and we know they stand up to the test.

Abruzzese pecorino has a strong, savory character, with aging making all the difference. Local smoked scamorza is a world apart from industrial versions. Every wheel we ship comes from producers we know personally, not from anonymous catalogs.
