Spicy Artisan Ventricina Vastese | Our Own Production
Spicy ventricina is the boldest version of the Vasto cured meat. It is the flagship product of Salumeria Belfiore and the symbol of an entire territory. We produce it ourselves with 100% Italian pork, selected, cleaned of tendons and nerves, and cut into large chunks by hand. Not minced, not ground. This detail is not an artisan whim: it means that the meat fibers remain intact, the texture is completely different, and the flavor is expressed in a way that no machine can replicate.
Salt, local hot chili powder, wild fennel seeds, pepper. Nothing else. Stuffed into natural casing and slowly aged in the cellar, following the traditional Vasto recipe.

Belfiore ventricina is stuffed into natural pork casing, not synthetic casing. Each piece is unique in shape and weight, exactly as a true artisan product should be. The available ventricine typically range from 700g to 1kg. The price is €40 per kg: the final cost is calculated based on the exact weight of your piece and confirmed before shipping, with no surprises. Storage
Store in a cool, dry place or in the refrigerator. After opening, store vacuum-packed or wrapped in deli paper in the refrigerator and consume within 10-15 days. It can be frozen.
